Easiest Pumpkin Cookies Ever

pumpkincookie.pngThis week what I wanna share with you is a little fall treat that we love. And though I promise not to make a habit of this, I am cross-posting this recipe onto Whisk-y Business, a baking blog my friend and I have begun, because in my humble opinion this recipe cannot be shared with too many people.

I’ll be honest with you, this one came from my mom. But all of the best things do!

For years we’ve made these quick and easy Pumpkin Chocolate Chip Cookies and have had neighbors and friends rave over them. And the best part is- they take absolutely no baking skill and no prep time at all! This is a recipe that, once tried, you would have no trouble remembering and making again and again. With just three ingredients- Spice Cake mix, pumpkin and chocolate chips- this is hands down my go-to for fall get-togethers or Halloween parties.

And with Halloween being the kick of to the best three months in the year, (I know, I am biased) making these with the kids is always a joy. When your adorable nephew, AKA Dragon Boy, comes over to you and mumbles in his broken two-year-old sentences, “Winzee, make cookies pweez,” who could say no?

And after it’s all said and done, we can chat together and enjoy a mouthful of autumn. What better way to spread around fall fun than to ditch a plate of cookies on the neighbor’s doorstep with a note from the “Pumpkin Phantom!”

Ingredients;

  • 1 box of Spice Cake mix (I used Betty Crocker brand)
  • 1 can of Pumpkin
  • 1 bag of Chocolate chips (this time we substituted Heath English Toffee Bits instead)
    • Sometimes mom likes to sneak and add a bit of Almond or Vanilla extract (;

Procedure;

–Preheat oven 350°– In a large mixing bowl, combine cake mix and pumpkin until smooth. Then add your chocolate chips (or other morsels of goodness.) Next you will spoon mixture onto your cookie sheet in desired cookie size, and throw them in the oven! Bake times vary according to the size of cookies you want, but average between 14-19 minutes. Have a festive fall!
